In this hands-on workshop, you’ll make your own batch of miso from start to finish while learning about the microorganisms that drive fermentation, the processes behind miso’s deep umami, and the cultural history of this ancient food. You’ll leave with a jar of miso to ferment at home, along with the knowledge to taste, track, and understand its transformation over time.
